Balaton Cherry Compote

The challenge is to keep from repeatedly sampling this superb sauce while it's simmering...so there's something left to serve!

1 cup Water
2 1/2 cups Splenda
3 Tbsp. Vanilla Extract (not immitation vanilla)
2 tsp. Almond Extract
3 pounds Individually Quick Frozen (IQF) Balaton cherries

Directions --
Put all except cherries into a medium saucepan and heat together.Add cherries and simmer (low simmer), uncovered, for two to three hours-- stirring occasionally until reduced to a thick sauce with almost no liquid.
Serving suggestions: As a topping for No sugar vanilla Ice Cream or any kind of plain, lowfat cake--chocolate, white, yellow (even Angel Food cake)--made with Splenda instead of sugar.
Also, this compote transforms canned fruit--such as peaches or pears--into a special occasion treat.
