Lowfat Yogurt la Balaton Our cherries are scrumptuous eaten right out of the freezer--just thaw them slightly in the microwave. But, if you're looking for a more elegant dish, this is it! Put approximately 1/3 cup Balaton Individually Quick Frozen (IQF) cherries in the bottom of a bowl. Microwave 2 minutes on Defrost setting (Power Level 2) stirring once. Cover with plain, lowfat yogurt and sprinkle with Splenda--granular or in packets. Balaton Cherry Compote The challenge is to keep from repeatedly sampling this superb sauce while it's simmering...so there's something left to serve! 1 cup Water 2 1/2 cups Splenda 3 Tbsp. Vanilla Extract (not immitation vanilla) 2 tsp. Almond Extract 3 pounds Individually Quick Frozen (IQF) Balaton cherries Directions -- Put all except cherries into a medium saucepan and heat together. Add cherries and simmer (low simmer), uncovered, for two to three hours-- stirring occasionally until reduced to a thick sauce with almost no liquid. Serving suggestions: As a topping for No sugar vanilla Ice Cream or any kind of plain, lowfat cake--chocolate, white, yellow (even Angel Food cake)--made with Splenda instead of sugar. Also, this compote transforms canned fruit--such as peaches or pears--into a special occasion treat. Cherry Oat Mini Loaves ***Bakery secret for Lowfat quickbreads: Replace the fat in quickbread recipes with peeled, grated, packed golden delicious or gala apples--as in this recipe.*** 2 cups Individually Quick Frozen (IQF) Balaton cherries Liquid ingredients (Do first to soak oats well): 2 cups Rolled oats 1 Tbsp. Vinegar 1 cups Water 1/4 cup Egg whites (may use frozen egg substitute, thawed) 1 cup peeled, grated, packed, Golden Delicious or Gala apple (1 giant or 2 medium-size apples) 1 tsp. Almond extract Dry ingredients: 2 cups Flour (all-purpose, unbleached or whole wheat pastry flour) 1 cup granular Splenda 1 Tbsp. Plus 1 tsp. Baking powder 1 1/2 tsp. Nutmeg 1 cup Instant Milk Powder Directions -- Cherries should not be thawed. Measure, then cut cherries in half and return to freezer until called for. Preheat oven. Have mini-loaf pans prepared by spraying with cooking spray. [Note: we like to line the pans--bottom only--with waxed paper] Mix liquid and dry ingredients separately, then mix halfway before adding cherries. Note: Apple may be grated in a food processor or by hand, though not in a blender. Bake at 350 degrees for 20 to 25 minutes, until nicely browned. Makes 8 mini-loaves 2in. x 3in. x 2in.
